Breakfast scramble lovers… this one is for you!
The mix of eggs, sweet potatoes, cilantro and avocado is delish! Who doesn’t love a simple tasty breakfast? This fried egg veggie scramble is a go-to on the weekends at home because we love the combo of eggs with sweet potatoes and of course all the goodies, pico + cilantro + avocado. Sharing what you need & how to quickly throw it all together.
What you need:
2-5 cloves Garlic (how much do you like!?)
1 handful spinach
1 handful mushrooms, cleaned & diced
1 handful sweet potatoes, diced
Sea salt & pepper
For the top:
1 handful cilantro
Scoop of fresh pico salsa
Prep veggies: chop up sweet potatoes, onions, mushrooms. Add garlic to pan and start sautéing! Add onions, sautéing for 2-3 minutes then add sweet potatoes and mushrooms. In a seperate pan add coconut oil and crack two eggs into the pan. Fry each side for 2-3 minutes then add salt and pepper. While veggies are cooking, get your plates ready. Rip up some spinach, add salsa, avocado & green onion. Once veggies are done, add to plate + fried egg. Top with cilantro, hot sauce and a little goat cheese.
