Im eating one as I type up the recipe.. they are that good (for a cookie with no sugar, gluten or dairy!) I am always looking for fun (healthy) treats to make and this one is delicious, a new take on the classic peanut butter cookie. Very few ingredients and quick to make. If you are not doing whole30, I would use peanut butter vs almond butter.
What you need:
1 cup raw almonds
1/2 cup almond butter
1 cup pitted dates
1/4 cup unsweetened coconut flakes
1 tbl pure vanilla extract
small splash of almond milk if needed
pinch of sea salt
1. Add almonds, almond butter, dates and vanilla to a food processor and mix until all ingredients blend together. If the “dough” appears slightly dry, add a splash of almond milk.
2. Set aside a plate lined parchment paper and roll the dough into 1 inch round balls.
3. After you finish the dough, take a fork and make the # pattern.
4. top with coconut and sea salt.
