This is the ultimate Buddha bowl! Cauliflower and broccoli mix well with roasted chickpeas and a tahini dressing. The roasted chickpeas complete this bowl, adding an extra crunch. This is one of my favorite go-to bowls because I almost always have all ingredients on hand, and I’m all about quick eats so I can get to the important things- like more recipe testing or more importantly… Dessert!
What you need:
1 cup Broccoli
1 cup Cauliflower
1 can chickpeas
Healthandus seasoning blend
For the sauce:
2 tbl tahini
2-6 cloves Garlic
1 tbl water
I like to make extra sauce to save as leftovers for other dishes later in the week.
Spread chickpeas evenly on a baking sheet,, sprinkling with avocado oil and healthandus seasoning. Cook until crunchy or 25-30 minutes.
Roast cauliflower & broccoli together, on a seperate pan, cooking for 20 minutes or until golden brown.
For dressing: Mix garlic + tahini + water
Place veggies in a bowl and top with chickpeas and tahini.
