Looking for your new favorite summer dinner? This spring rolls with mint, beets, mango, red pepper and cilantro are probably it! So light and refreshing and obviously amazing in the homemade peanut sauce. I wish I made more for leftovers. The best part of these rolls is you can really do them however you would like. Feel free to add more or less ingredients of your choosing or add more ingredients to each roll. This is your roll..!
What you need:
1/2 cup mint, stems removed
1/2 cup cilantro, stems removed
1 mango, sliced
5 small beets, sliced
1 red pepper, sliced
1 cup shredded carrots

- Slice all vegetables and set on a prep plate.
- Prep peanut sauce
- In a large pie dish, fill with warm water then soak each rice paper for 15 to 20 seconds, until its soft.
- Place rice paper on a separate plate (which you will use for rolling the rolls).
- Place ingredients on top/middle of rice paper roll and fill with enough ingredients, then wrap like a burrito.
