Roasted veggies on a bed of greens is such a great way to make a meal quick, delicious & easy. The bonus is making a little more for leftovers. If I could put a meal on repeat all winter, this is it right here!
Roasted veggies on a bed of arugula + garlic lemon tahini and roasted chickpeas.
Take all your fav veggies, roast for 20-30 minutes on 375. Place rinsed chickpeas in bowl and toss with 1 tsp olive oil and add your favorite spices (curry, tumeric, pepper etc) Roast chickpeas on a seperate sheet for 20-30 minutes. For your dressing: add 2 tablespoons tahini, 1 tbl water, 1 tsp lemon juice and 2-3 cloves of garlic and mix, the best easy & tasty sauce. Place roasted veggies on a handful or arugula and top with tahini lemon dressing!
