This salad was SO good. We went to see what I had in my fridge and came up with this noodle salad. We were beyond impressed. The zucchini noodles with lentils were the perfect texture and the mint dressing on top was what made this dish the best. Great flavor for an end of summer dish. We were celebrating my birthday so we had peach crostini with gorgonzola on the side, yum!
What you need:
4 Zucchinis, spiralized
1 cup lentils cooked
1/2 cup cabbage sliced
1/4 cup feta for topping
1 avocado, diced for topping
1/2 cup green onion for topping
For the dressing:
1 cup greek yogurt
1 cup mint, de-stemmed (less if you want a more mild flavor)
dash of salt and pepper
1/4 cup olive oil
1-3 garlic cloves (depends on how much you like garlic)
Spiralize zucchini, chop cabbage, cut green onions, dice avocado. Add all ingredients into a bowl, layering zucchini, cabbage, lentils and top with avocado, feta and green onion. For the dressing, blend all ingredients into food processor and pour over salad once you are ready to enjoy!
